Best – Ever Lemon Pie


1 baked pie shell
1 1/4 c. sugar
6 tbsp. cornstarch
2 c. water
3 eggs, separated
1/3 c. lemon juice
1 1/2 tsp. lemon extract
3 tbsp. butter
Sugar, salt, and vanilla to taste (for meringue)


Mix sugar, cornstarch together in top of double boiler; add water. Combine egg yolks with juice and beat. Add to rest of mixture. Cook until thick over boiling water for 25 minutes. Add lemon extract and butter; stir thoroughly. Pour into deep 9 inch pie shell and let cool. Cover with meringue and brown in oven at 350 degrees for 10 minutes.
To make meringue, beat egg whites at high speed until foamy. Add sugar gradually and beat until stiff. Add salt and vanilla.
