Raspberry Pie recipe

Raspberry Pie recipe

Ingredients:

20 oz frozen raspberries, thawed.
2 cups of vanilla wafer crumbs.
½ cup of sugar.
1 teaspoon of cinnamon.
5 tablespoons of butter, melted.
1 packet unflavored gelatin.
¼ cup of water, cold.
½ teaspoon of lemon peel.
½ pint of heavy cream.
1 teaspoon of vanilla.
Pie shell.
Preparation Instructions:

Drain the raspberries, reserving 1 cup of their juice.

Combine the crumbs, sugar, ½ teaspoon of the cinnamon and melted butter; then pat into a 10 inch pie plate.

Bake at 375°F (190°C) for 8 -10 minutes, then allow to cool.

Soften the gelatin in water.

Mix the reserved raspberry juice, the remaining ½ teaspoon of cinnamon and lemon peel and heat to boiling.

Remove from heat, then add the gelatin and stir until melted.

Chill until the mixture just begins to thicken.

Whip the cream and add the vanilla.

Fold the raspberries, gelatin mixture and whipped cream together.

Pour into the pie shell and chill.

Raspberry Pie

INGREDIENTS

* 1 (9 inch) baked pie shell
* 2 c. milk
* 1 vanilla bean
* 1/3 c. flour
* 1/2 c. sugar
* 1/4 tsp. sugar
* 1/4 tsp. salt
* 4 egg yolks
* 1 1/2 c. whole raw almonds
* 1 1/4 c. powdered sugar
* 1 egg white
* 1 1/2 tsp. almond extract
* 1 whole egg
* 1/4 c. heavy cream
* 1 pt. raspberries (fresh)
* 1 (6 oz.) glass currant jelly

INSTRUCTIONS
In double boiler, scald milk with vanilla bean. Remove bean. Mix flour, sugar, and salt. Add a little milk. Stir until smooth. Add to remaining milk and cook in double boiler until thick. Beat together 4 egg yolks and whole egg. Add a little hot milk mix. Stir until smooth.
Add to remaining milk mixture and cook over simmering water. Stir constantly until thick. Cool and stir into whipped cream. Pour into pie shell and cover with fresh raspberries – bottom side up. Melt jelly over low heat and pour over berries. Chill. The raspberry pie recipe is ready to serve….enjoy ! Bon apetit !
