Key Lemon Pie Recipe

Ingredients:

* 1/3 c- Lime juice
* zest of 6 Key Limes
* 14 oz- sweetened condensed milk
* 3 ea- egg yolks, beaten
* 1 1/2 ts- rum
* Green food coloring (4-6 drops)
* 1 x 9-inch graham craker crust
* 1/2 pt- whipped cream
* 2 T- confectioner’s sugar
* 1 T- rum

Method:

* Add lime juice and zest to condensed milk. Beat in egg yolks. Add rum and food coloring to it, if desired.
* Pour into pie shell.
* Whip cream together with 2 T confectioner’s sugar and 1 T rum. Now, spread whipped cream evenly over pie.
* Chill until set, (for about 4 hours).

Chocolate Pie Recipe

Ingredients:

1 cup sugar
1/2 cup flour
2 – 3 oz. unsweetened chocolate, coarsely chopped
3 cups milk
1/4 tsp. salt
1 1/2 tsp. vanilla
3 egg yolks, lightly beaten
1 tbsp. butter
One baked 9″ pie shell

Directions:

1. Blend flour, sugar and salt in a saucepan. Add milk gradually, stirring until smooth.

2. Cook over medium heat, stirring constantly, until mixture thickens.

3. Remove from heat. Add chocolate; stir until well blended.

4. Add a small amount of cooked mixture to beaten egg yolks. Add to remaining mixture in saucepan.

5. Return to heat and bring to a boil. Remove from heat then add the butter and vanilla, mix well.

6. Cover with waxed paper and cool slightly. Place cooled filling into pie shell, top with meringue.

7. Bake at 275 for 15 minutes or until lightly browned.
