Chocolate Meringue Pie

PIE SHELL:

2 egg whites, using x-lg. eggs
1/8 tsp. cream of tartar
1/2 c. sugar
1/2 c. walnuts, finely chopped

FILLING:

1 (6 oz.) pkg. chocolate bits
2 tbsp. sugar
3 tbsp. hot water
1 tsp. vanilla
1/2 pt. heavy cream, whipped

PIE SHELL: Add tartar to egg whites and gradually beat in sugar until very stiff; add nuts. Butter 9″ pie plate and line with meringue. Bake at 300 degrees for 45 minuts or until meringue is hard. Cool.
FILLING: Melt bits with hot water and sugar. Add vanilla and cool. Beat cream until stiff. Fold into cooled, melted chocolate. Refrigerate overnight. So rich that eight pieces can be served.

Chocolate Mint Pie

INGREDIENTS:

1 chocolate pie shell, premade
Chocolate mint ice cream
Chocolate shavings

DIRECTIONS:

Allow ice cream to soften and spread in pie shell. Freeze for at least 2 hours. Chocolate Mousse Pie

INGREDIENTS:

1 graham cracker pie crust
1 (8 oz.) Cool Whip
1 (3 oz.) cream cheese
1 Baker’s chocolate
1/3 c. milk
1 tbsp. sugar (opt.)

DIRECTIONS:

Cream together sugar and cream cheese. Melt chocolate in 1/2 of milk. Blend chocolate, remaining milk and cream cheese. Add Cool Whip. Beat until smooth. Spread mixture in pie crust.
