INGREDIENTS AND DIRECTIONS:
A great casserole dish made from Sunday Dinner’s leftovers. 1/2 c. chopped onion 2 c. gravy 1/4 tsp. pepper 1 c. chopped cooked vegetables 1/2 c. chopped celery 1/2 tsp. salt 2 c. cooked, mashed potatoes
Combine roast, vegetables, onion and celery. Place in 1 quart buttered ovenproof casserole.
In a saucepan, heat gravy. Pour over roast mixture. Sprinkle with salt and pepper.
Spread mashed potatoes over gravy. Bake at 325 F. for 1 hour or until thoroughly heated.
