Florida Key Lime Pie

INGREDIENTS:

Crust of your choice

FILLING:

Yolks of 5 lg. eggs
1/2 c. fresh lime juice
1/3 c. sugar
1/8 tsp. salt
2 tbsp. grated lime peel
2 1/2 c. heavy cream

DIRECTIONS:

In double boiler using wire whisk beat egg yolks, lime juice, sugar and salt until well blended. Set over simmering water, cool about 5 minutes, stirring constantly until mixture is thick enough to coat back of metal spoon.

Remove from heat. Stir in 1 tablespoon lime peel. Refrigerate for 45 minutes. Meanwhile in large bowl beat cream, set one cup aside. Fold lime mixture into cream. Cool in refrigerator at least 2 hours.

Mix rest of cream and lime peel. Put on top. Enjoy! 465 calories per slice, but it is worth it.
