Sweet Potato Pie

INGREDIENTS AND DIRECTIONS:

A traditional southern Christmas dish, sweet potato pie looks and tastes like a dessert. It is served as a vegetable. 1 1/2 c. mashed, cooked sweet potatoes 1/3 c. sugar 1/4 tsp. salt 2/3 c. milk 1/3 c. orange juice 1 tbsp. honey 1 tsp. vanilla 1/2 c. finely chopped pecans 1 unbaked 9-inch pie shell Whipped cream topping

Beat eggs until foamy. Mix in sweet potatoes, then sugar, salt, milk, orange juice, honey, vanilla and pecans. Turn mixture into pie shell. Bake at 450 degrees for 10-15 minutes, then turn oven to 350 degrees and continue baking about 25 minutes. Cool and serve with whip cream topping.
