Sweet ‘N Low Sweet Potato Pie

INGREDIENTS:

3 eggs
1 tsp. vanilla
About 1/4 tsp. nutmeg (enough to suit you)
2 level tbsp. Sweet ‘n Low
About 4 c. sweet potato
Deep dish pie shell

DIRECTIONS:

Cook potatoes and mash them. Using regular tablespoon, put 1 tablespoon of Sweet ‘n Low in, add all other ingredients and stir. If not sweet enough add 2nd tablespoon of Sweet ‘n Low, repeat until to taste desired. Pour into a deep dish pie shell. Bake in 375 degree oven until done.
