Pumpkin Ice Cream Pie

INGREDIENTS:

1 baked pie shell (9″)
1 qt. vanilla ice cream
1 c. canned pumpkin
3/4 c. granulated sugar
1 tsp. salt
3/4 tsp. pumpkin pie spice
1 c. heavy cream

DIRECTIONS:

1. Spread slightly softened ice cream in bottom of pie shell.
2. Mix together pumpkin, sugar, salt and spice.
3. Whip cream and fold into pumpkin mixture.
4. Spoon pumpkin mixture over ice cream and return to freezer until a few minutes before serving time.
