Kathie’s French Onion Quiche

INGREDIENTS:

Pastry for 9″ single pie crust OR use deep dish frozen pie shell
2 cans (3 oz. ea.) French fried onions
3 eggs
1 1/2 c. milk
1 1/4 tsp. salt
Generous dash of cayenne pepper
1 c. Sharp Cheddar cheese, grated

DIRECTIONS:

Line pie pan with pastry and flute edges. Preheat oven to 425 degrees. Spread French fried onion rings in bottom of pastry shell. In small bowl beat eggs; beat in milk, salt and cayenne pepper. Pour mixture over onions. Over top sprinkle the grated cheese. Bake for 15 minutes. Reduce heat to 350 degrees and bake additional 15-20 minutes, or until custard is set. Cool slightly before serving. Makes 6 servings.
