French Mint Pie

INGREDIENTS:

CRUST:

3/4 pkg. vanilla wafers, crushed
1/3 stick butter, melted
Dash of cinnamon

DIRECTIONS:

Mix together and pat into 8-inch pie pan. Bake at 350 degrees for 10 minutes.

FILLING:

2 squares chocolate, melted
1 c. powdered sugar
1 stick butter, softened
1 egg (2 if small)
3 drops essence mint or 1 tsp. peppermint extract

DIRECTIONS:

Beat chocolate, powdered sugar, and butter until very soft. Add egg and extract. Let stand in refrigerator several hours before serving. Tastes like “Thin Mint Girl Scout Cookies!” Serves 1-6.
