INGREDIENTS:
2 c. coconut
2 c. sugar
4 eggs
1 stick butter, melted
3 tbsp. flour
1/3 c. buttermilk
1 tsp. vanilla
2 unbaked pie crusts
DIRECTIONS:
Makes 2 pies.
Spread 1 cup of coconut in each unbaked pie crust. Mix remaining ingredients by hand. Pour mixture over coconut. Bake at 350 degrees for 40 minutes.
