Lemon Meringue Pie

INGREDIENTS:

1 c. sugar
1/4 c. cornstarch
1/2 tsp. salt
1 1/4 c. warm water
Grated rind of 1 lemon
3 eggs (yolks), beaten
1 tbsp. butter
1 baked pie crust

DIRECTIONS:

Mix sugar, cornstarch and salt. Add warm water, lemon rind and lemon and butter. Cook slowly, stirring until thick.

MERINGUE:

INGREDIENTS:

3 egg whites
1/4 tsp. salt
1/3 c. sugar, whipped

DIRECTIONS:

Add meringue to pie and bake 20 minutes at 350 degrees.
