Shepherd’s Pie Recipe

INGREDIENTS:

1 1/2 pound ground beef (or substitute ground lamb or turkey or even chicken)
1 large onion chopped
2 tablespoons flour
6 potatoes cooked
OR
6 servings cooked instant mashed potatoes
1 cup cheddar cheese (more if you like)
1/2 cup milk

DIRECTIONS:

Cook and brown the meat with the onions. It’s worthwhile adding some water initially and removing any excessive fat with a strainer pitcher. Stir in the flour and cook on low until most of the liquid is absorbed. Mash potatoes with the milk, add salt and white pepper to taste and mix in the cheese.

Place meat and onions in a casserole, cover with the mashed potatoes. Ridging or creating a design with a fork and sprinkling a little paprika improves the appearance.

Broil or cook at 400 F until the top is golden brown.

The basic recipe was originally a one-pot dish but it’s easier with two. The recipe is nearly fat-free if fat-free milk, cheese and ground turkey breast is used. It’s not quite as good as the real thing but not bad at all!

This recipe for Shepherd’s Pie serves/makes 6.
