Potato Pie Recipe

INGREDIENTS:

3 medium potatoes — thinly sliced
2 medium carrots — grated
2 green onions — chopped
8 ounces chicken broth
1 tablespoon chopped parsley
salt and pepper — to taste

DIRECTIONS:

Preheat oven to 350F. Arrange 2 layers of potato slices in a greased pie plate or quiche pan. Spread carrots and onions over the potatoes. Layer remaining potatoes on top. Pour broth over the top.

Cover and bake 40 minutes. Uncover and sprinkle parsley and salt and pepper over the top. Bake, uncovered 10 - 15 minutes. Let stand 10 minutes, then cut into wedges.

This recipe for Potato Pie serves/makes 6.
